Egg & Avocado on Toast

Ingredients – serves 1

1 large egg

Half an avocado mashed with salt, pepper – I add 1tsp lemon juice to mine so I can use the other half the next day

1 slice bread – preferably whole meal or seeded

2 tsp olive oil

Salt and pepper to taste

Sprinkle of chili flakes

You can fry the egg, scramble or poach!


  1. Toast your bread

  2. Add the oil to a frying pan and once hot crack your egg into it – fry until egg white goes opaque and yolk is cooked (runny or hard, up to you)

  3. Add your mashed avocado to the toast and top with your egg.  Add salt and pepper to taste and a sprinkle of the chili flakes – Yes, it is really that simple!
