Moroccan Vegetable Couscous
Ingredients – Serves 4
240g dried couscous
360ml boiling water
1 vegetable stock cube
100g cherry tomatoes chopped in half
1 bell pepper cut into small pieces
50g radishes cut in small slices
50g spring onion finely chopped
50g mixed seeds
200g kale roughly chopped
25ml olive oil
1/4 teaspoon of the following (all optional) - paprika, turmeric, cumin, coriander, ginger
pinch salt and pepper

Method

Put your couscous in a bowl, add the boiling water, stock cube and stir until stock dissolved. Cover and leave to one side

Heat the oil in a large frying pan and add the spices to the oil - stirring continuously for 30 seconds.

Add the pepper, tomatoes and spring onion - cook for approx. 5 minutes until slightly soft then add your kale. Cook for 5 minutes then take off the heat. Add your radish, a pinch of salt and pepper, stir and leave to cool

Uncover your couscous and gently fluff up with a fork

Distribute the couscous evenly between the plates and add your kale ix to the side

Sprinkle on some mixed seeds and enjoy
