Healthier Toastie


Ingredients – Serves 1

2 slices of bread (preferably wholemeal or seeded)

30g reduced fat mozzarella cheese

1 tsp reduced fat pesto

1 small salad tomato or a couple of cherry tomatoes

Pinch salt and pepper

Cooking spray

Optional toastie maker OR non-stick frying pan, plate and a piece of parchment paper


  1. Remove the cheese from the packet and squeeze out some of the extra water.  Get a couple of pieces of kitchen roll and wrap the cheese up to soak up as much water as possible.

  2. Thinly slice the cheese and tomatoes – remove the seeds from the tomatoes and also dab them with kitchen roll to take away some of the water.

  3. Put 1tsp of pesto on the bread and spread it evenly, adding the cheese and tomato on top – salt and pepper to taste. Add the second bit of bread on top to make a sandwich.

  4. If you are using a toastie maker, spray the heat plates with cooking spray and follow the manufactures instructions on how to heat it up and use to make the toastie (usually adding the sandwich carefully to the toastie maker and closing the lid for 2 minutes).  Carefully remove and enjoy.

  5. If you don’t have a toastie maker grab your non- stock frying pan and heat it up on a low to medium heat.  Spray with cooking spray and carefully place your sandwich in it.

  6. Add a bit a parchment paper on top of the sandwich and then weigh it down with a plate (I usually put an oven glove on and apply gentle pressure to the plate).

  7. Allow to cook for approx. 1-2minutes until the bread is toasted and golden.  Get a spatula and carefully turn the sandwich over and repeat the process until both sides of the bread are golden and the filling warm.

  8. Cut in half and enjoy!
