Healthier Apple & Berry Crumble

Ingredients – Serves 10-12

800g sweet apples (Pink Landy/Braeburn)

200g berries (I love blueberry and raspberry)

100ml water

1 tsp ground cinnamon

1/4 tsp nutmeg

1 tsp ground ginger

Zest of half an orange

Low calorie cooking spray

Crumble Topping

140g porridge oats

50g crushed cashew nuts

50g mixed seeds

1 tsp cinnamon 

1 tbsp light margarine - melted

1 tbsp honey

Method

  1. Preheat the oven to 180'C

  2. Peel and core your apples, cut into 1cm slices

  3. Add the water, apples, berries, spices and orange zest to a large saucepan stir to all spices cover the apples and simmer on a low heat until the apples go soft - keep stirring to stop them catching on the pan

  4. Add all your crumble ingredients to a bowl and mix well

  5. Spray a large baking dish with the low calorie spray and add your apple mixture.  Top with the crumble mixture and spray the top with the light cooking spray.

  6.  Cook in the oven for approx. 45-50 minutes until the topping is golden brown

 

Not the most highly nutritious dish ever but with less calories, fat and sugar it can be a real crowd pleaser!
