Salmon and Veg Parcels

Salmon Dish

Ingredients – Serves 2 

2 salmon fillets

100g broccoli 

200g asparagus

100g carrots

100g mushrooms cut in half

50g cherry tomatoes

50g radish 

150g rice

pinch of sesame seeds

Kitchen foil x 2 - Slightly larger than an A4 piece of paper


1 vegetable stock cube mixed together with 50ml of water to create a paste

Tsp paprika

Tsp garlic granules 


  1. Preheat the oven to 180'C.  Take your green vegetables and par boil them for 5 minutes

  2. Split all of your green veg, tomatoes, mushrooms between the 2 pieces of foil (in the middle)

  3. Put the salmon on top , add the paprika and garlic to the stock paste then spread it on the salmon.

  4. Bring the corners of the foil to the middle and scrunch up so that you create a parcel - make sure it is not too tight.

  5. Place the parcels on a baking tray and cook for 20 minutes in the oven

  6. Cook the rice as per packet instructions

  7. Place the rice in a bowl and put the pieces of radish on top.

  8. Carefully open the foil parcel and tip the 'sauce' into the bowl followed by the veg/salmon and a sprinkle of sesame seeds

  9. Serve and enjoy



Don't want to use the foil? Place the veg on a baking tray, spray with cooking spray and then place the salmon on top to roast.
