Pulled Jackfruit Burger

Ingredients – Serves 4 

4 large whole meal bread rolls

10g butter/margarine per bread roll

2 cans jackfruit

250g passata

Tap water - to water down mixture if needed

2 tsp smoked paprika

1 tsp garlic granules

1 tsp mixed herbs

1 tbsp smokey BBQ

2-3 drops Tabasco

Salt and pepper to taste 

Salad and sauces of your choice to top the burger (I use lettuce, tomato, gherkin, light mayo, 20g light cheese)

Method

  1. Drain your jackfruit and cut into small pieces 

  2. In a large frying pan add your passata, herbs/spices, Tabasco etc, then add the jackfruit - mix until all jackfruit covered.  Simmer for 20 minutes stirring occasionally.

  3. After 20 minutes the sauce should have reduced by half - if not keep simmering until the consistency looks like that in the photo above.

  4. Butter your bread roll and start to assemble.  I use 2-3 dessert spoons of jackfruit per person.

  5. Add the toppings of your choice and enjoy

 

 

To serve why not try grilled vegetables, side salad or homemade potato wedges.
