Mediterranean Roast Veg

Vegetables for Roasting

Ingredients – Serves 2 

1 large red onion cut into quarters and the segments separated

2 bell pepper cut into 2-3cm thick strips

1 large courgette, de-seeded and cut into 3cm chunks

150g cherry tomatoes

50 g olives

40g light fetta crumbled 

4 garlic cloves - skin on but crushed slightly

50ml olive oil

4 sprigs of rosemary (dried is fine, use 1-2tsp)

Salt and pepper to taste


  1. Pre heat the oven to 180'C

  2. Place all the veg, feta and rosemary into a non stock baking tray

  3. Sprinkle with salt, pepper and olive oil - toss the veg around to make sure all is covered

  4. Cook for 25 - 30 minutes until soft



This is great with salmon (place the fillets on top of the veg for the last 15-20 minutes)
