Green Bean Salad

Ingredients – Serves 2

350g green beans - ends cut off

100g cherry tomatoes

60g light halloumi cheese cut into 2cm cubes

1 tsp garlic granules

1 tsp Italian herbs

20ml extra virgin olive oil

20 ml balsamic vinegar 

Cooking spray

Pinch of salt and pepper

Method

  1. Boil the beans until they are Al Dente (have a slight bite to them) - drain and leave to one side

  2. Heat up a large frying pan, add some cooking spray then put in the tomatoes and halloumi - cook until the tomatoes are soft and the halloumi has browned slightly then add the garlic and herbs - mix thoroughly.

  3. Add the beans to the pan and mix together so they are warmed through.  

  4. Poor over the oil and sprinkle in the salt and pepper - stir so all covered

  5. Dish out and sprinkle over the balsamic vinegar

 

 

Perfect side to most dishes but I love this with my Jackfruit Burger Recipe.
