Pork Skewers
Ingredients – Serves 4 - pair with my side salad or roasted veg
500g pork pieces
150g baby tomatoes
1 large onion
Lemon juice optional
Skewers

Marinade
50ml olive oil
Tsp mixed herbs
Tsp paprika
Tsp garlic granules
Tsp light soy sauce
4g honey

Method

In a mug mix together all your marinade ingredients together. Add your pork pieces into a bowl, add the marinade on top and mix the pork by hand so all covered. Cover with clingfilm or a plate and put to one side (can be premade and left in the fridge for up to 6 hours)

15 minutes before you want to make the skewers, fill a bowl with tepid water and add the skewers. Make sure all are wet and leave soaking for 15 minutes. (this helps the skewers to not burn)

Time to build the skewers - preheat the oven to 200'C. Push a piece of meat on the skewer approx. 3/4 of the way down. Next add a bit of onion, then tomato - repeat until the last piece put on (2cm from the top of the skewer) is a bit of pork. Continue to do this until all the skewers are ready

Place the skewers on a foiled baking tray and put in the oven for 25-30 minutes until the meat is cooked all the way through and is piping hot.

Optional squeeze of lemon juice on top and serve along side my side salad/roast veg and some new potatoes
A portion is 2 skewers and feel free to try different meats, veg etc.
